    Amount Measure Ingredient -- Preparation Method

    2 1/2 pounds chicken -- quartered
    1/4 cup all-purpose flour
    1 tablespoon minced garlic
    1/4 cup olive oil
    1/4 cup fresh lemon juice
    1/3 cup bottled capers* -- drained
    2 tablespoons reserved brine from capers

    Coat chicken with flour, shaking off excess. In a large heavy skillet, cook garlic in oil over moderate heat, stirring constantly, until garlic is pale golden. Add chicken and brown 2 to 3 minutes on each side.
    Add lemon juice and capers with reserved brine and simmer, covered, turning and basting chicken occasionally until juices run clear when thickest part of thigh is pricked, 30 to 35 minutes. Transfer chicken to a warm platter and skim fat from sauce. Spoon sauce over chicken.
