    1 tablespoon margarine, soft
    1 large onion -- chopped
    2 large celery ribs -- chopped
    1 large carrot -- chopped
    1/4 cup chopped fresh parsley
    1 clove garlic -- minced
    3/4 cup defatted chicken broth
    1/2 teaspoon dried thyme
    1/8 teaspoon ground black pepper
    2 1/2 cups herb-seasoned stuffing cubes
    6 skinless boneless chicken breasts -- 4-oz. each
    1 teaspoon soft margarine -- melted
    1/4 teaspoon salt
    1/4 teaspoon dried basil
    1/4 teaspoon dried thyme
    1/8 teaspoon ground black pepper

    To make the stuffing: Melt the margarine or butter in a large no-stick skillet over medium heat. Add the onions, celery, carrots, parsley, garlic and 1/4 cup of the broth. Cook, stirring, for 5 minutes, or until onions are tender. Stir in the thyme and pepper. Remove from heat.
    Stir in the stuffing mix and remaining 1/2 cup broth. Transfer to a 9x13" baking dish.
    To make the chicken: Lay chicken on top of stuffing. Brush with the margarine or butter and sprinkle with the salt ( if using), basil, thyme and pepper. Bake at 350 F. for 25 to 30 minutes, or until the chicken is tender and no longer pink when cut with a sharp knife.
