    Skillet Spanish Rice

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/4 cup oil
    1 medium onion -- thinly sliced
    1/2 cup green pepper -- chopped
    1/2 pound ground beef
    1 cup regular rice -- uncooked
    16 ounces tomato sauce
    1 1/2 cups water -- see note*
    1 teaspoon prepared mustard
    1 teaspoon each: salt and pepper

    Heat oil in skillet. Add onion, green pepper, beef and rice. Stir over high heat until lightly browned. Add tomato sauce and remaining ingredients. Mix well. Bring quickly to a boil; cover tightly and let simmer 25 minutes.
