Catering Potato Salad
Servings: 12
3 lb new potatoes
8 oz Catalina dressing
1/4 c sweet red onion
1/4 c celery
1/4 c pitted black olive
1/2 c mayonnaise
1/4 ts Jane's Crazy Mixed-Up salt
1/4 ts white pepper
1 ea hard boiled egg
Simmer potatoes in salted water, until almost tender.
Drain well, peel, and cutup or slice.
Combine warm potatoes with heated Catalina dressing;
cover and chill for 2-48 hours.
Combine potatoes with onions, celery, and olives; mix gently but thoroughly.
Add mayonnaise just to moisten and coat evenly;
season to taste with salt and pepper.
Garnish with sliced hard-boiled egg and serve chilled.
