    Joe's KC-Style Barbecue Sauce

Our taste panel described this sauce from Oklahoma Joe's Barbecue Restaurant as peppery with a kick. "There's a nice little tang from the vinegar, too," they said.

    3 cups ketchup
    1 cup granulated sugar
    1/2 cup packed brown sugar
    1/2 cup cider vinegar
    1/4 cup water
    2 tablespoons molasses
    1 tablespoon Dijon-style mustard
    1 tablespoon Worcestershire sauce
    2 teaspoons garlic powder
    2 teaspoons ground black pepper
    1 teaspoon salt
    1 teaspoon onion powder
    1/4 teaspoon liquid smoke

In a medium saucepan, stir together the ketchup, granulated sugar, brown sugar, vinegar, water, molasses, mustard, Worcestershire sauce, garlic powder, black pepper, salt, onion powder and liquid smoke. Bring to boiling, reduce heat. Simmer the sauce mixture uncovered, for 1 hour, stirring the barbecue sauce often as it cooks. Remove from heat. Cool mixture at room temperature. Cover and chill in the refrigerator for up to 2 weeks.

    Makes about 4 cups
