    Florentine Potatoes

    4 large baking potatoes
    1 package fresh spinach
    2/3 cup grated Swiss cheese
    Dash of nutmeg
    Salt & pepper to taste
    Thinly sliced mushrooms

    Bake potatoes for 1 hour. Cool completely. Slice off tops. Scoop out inside of potato, leaving 3/8" thick shells.
    Remove large stems from spinach; steam until wilted and squeeze out any excess moisture. Set aside.

    Dice scooped potatoes and mix with chopped spinach. Add grated Swiss cheese, dash of nutmeg, salt and pepper. Fill potato shells with mixture. Top with thinly sliced mushrooms. Bake at 325° F. for 30 minutes.
    Serve as a side dish.
