    Korner Dairy Onion Ring Batter

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 eggs
    1/2 cup milk or more
    1 cup flour
    1 teaspoon baking powder
    1 teaspoon salt
    1 teaspoon melted shortening or oil
    Bermuda onions -- sliced*

    Beat the egg; stir in alittle more than 1/2 cup milk. Sift together flour, baking powder and salt. Beat in alittle melted shortening or oil. Dip the sliced onions in batter and fry in deep fat. Drain on absorbent towels or brown paper and sprinkle with salt. Eat immediately for best flavor.

    Serves 4

    NOTES : *You can use other large sweet onions, such as Texas or Walla Walla.
    This recipe was given to me by the lady who handmade the onion ring batter for Korner dairy. Her name was Lorraine and we used to walk down there every evening for a soda and these onion rings. It was the only little Mom and Pop store that still had a soda fountain and the food served from that grill was something else! Its gone now, but the owner's son has a sub shop there.
