    Sheepherder's Potatoes

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    5 medium potatoes -- cut into 1/4-inch
    slices
    1 medium onion -- very thinly sliced
    1/4 pound bacon -- cooked and crumbled
    Salt and freshly ground black pepper
    1 quart chicken stock
    1/4 cup freshly grated Parmesan cheese
    1/4 cup freshly grated Romano cheese
    1/2 cup shredded Emmenthaler cheese

    Preheat oven to 350 F.
    In a large buttered, ovenproof casserole, alternately layer potatoes, onion and bacon. Season with salt and pepper. Pour chicken stock over potatoes and onion to fill three-quarters of the casserole.

    Bake for 1 hour, or until the potatoes are tender. Remove from the oven and sprinkle with cheeses. Return to oven and bake until golden brown and crusty.

    Serves 8-10

    Note: This goes well with lamb.
