    Speedy Microwave Scalloped Potatoes

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 cups thinly sliced potatoes
    1 tablespoon all-purpose flour
    1 teaspoon salt
    1/8 teaspoon pepper
    1/4 cup finely chopped onion
    1 1/2 cups milk
    1 tablespoon butter or margarine -- cut in small pieces
    2 tablespoons Cheddar cheese -- shredded

    Put potato slices in a 3-quart round glass casserole; sprinkle with flour, salt, pepper and onion. Toss lightly and then pat down. Pour in milk, scatter butter over top. Cover with clear plastic wrap*, leaving one corner folded back. Cook 16 to 18 minutes, stirring twice during cooking time. Sprinkle with cheese; let stand, covered, 5 minutes.

    Serves 4

    NOTES : *When using clear plastic wrap, be sure to REMOVE the dish from microwave and then carefully pull back to release steam!
