    GGE's Lemon Pie

    List of Ingredients




    1 1/2 cup sugar
    pinch salt
    6 tbsp. corn starch
    2 cups boiling water
    butter - size of walnut
    2 egg yolks, slightly beaten
    Juice of 2 lemons

    Recipe



    Mix cornstarch, sugar and salt together. Add boiling water and over med heat stir until thickened. Be careful not to scorch.
    Remove from heat and add butter and stir a cup of the hot mixture into the beaten egg yolks, stirring constantly. Add this back into the pan with the hot mixture and add the juice of the two lemons.
    Cook a little longer until yolks are cooked and pour into a baked pie shell. Cover while hot with your meringue and bake until meringue is browned.
