    List of Ingredients





    3 1/4 c plus 2 tbsp amaranth flour
    1 c plus 2 tbsp arrowroot
    3 tsp baking soda
    3/4 tsp unbuffered vitamin C crystals
    1 1/2 tsp salt, opt.
    1/4 c plus 2 tbsp oil
    1 1/2 c water

    Recipe





    Combine flour, arrowroot, baking soda, Vitamin c crystals and salt in a large bowl.
    Mix water and oil, then stir into dry ingredients. Stir until just mixed in.
    Pour into oiled and floured 8 X 4 loaf pan.
    Bake at 350 for 35 to 45 minutes, or until lightly browned.
    Test with a toothpick in the center, it should come out dry.
    Remove from pan immediately and cool on wire rack.
