List of Ingredients





1 1/2 c vegetable oil
2 c sugar
3 eggs
3 c flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
3 c shredded apples WITH peels
2 tsp vanilla



Glaze
2 tbsp butter
2 tbsp brown sugar
2 tbsp sugar
2 tbsp heavy cream
1/4 tsp vanilla





Recipe




Prepare a 9 or 10 inch tube pan.(8 cup capacity)
Preheat to 325

Combine oil and sugar; blend well.
Add eggs one at a time and mix well after each addition.
Sift into the oil mixture: flour, baking soda, cinnamon, nutmeg and salt. Mix thoroughly.
Add apples and mix; add vanilla, stir.
Pour into prepared pan' bake for 1 1/4 hours or until tests clean.

Remove from oven and prepare glaze while cake cools.
Melt butter, both sugars, cream and vanilla in a heavy sauce pan.
Boil for 1 minute without stirring, then remove from heat.

When cake has cooled for several minutes, remvoe from pan.
Spoon glaze over warm cake.


notes: recipe travels well and may be halved.
