    List of Ingredients





    4 boneless, skinless chicken breasts
    1/4 c flour
    3 tbsp butter
    1 c sliced mushrooms
    1/2 c chicken broth
    1/4 tsp salt
    1/8 tsp pepper
    1/3 c shredded mozzarella
    1/3 c grate Parmesan cheese
    1/4 c green onions, sliced


    Recipe




    Flatten the chicken breasts to 1/2 inch thick.
    combine chicken and flour; coat evenly.
    Melt butter in a large skillet, then add chicken and brown on each side, about 2 minutes.
    Preheat oven to 375.
    Grease a 13 x 9 baking dish.
    Place chicken in baking dish.
    Saute mushrooms in the chicken drippings until tender.
    Add broth, salt and pepper to skillet; bring to boil and let cook for 5 minutes to reduce liquid.
    Spoon skillet contents over the chicken and bake, uncovered for 15 minutes.
    Sprinkle iwth both cheeses and onions; bake 5 more minutes.
    4 servings.

    Notes:
    I sprinkled the chicken lightly with flour; used unsalted butter. I had to add olive oil to the skillet while the mushrooms cooked.
