Banana-Chocolate Chip Muffins

Recipe Introduction
So easy and so yummy.
List of Ingredients
1/3 c butter, softened
1 c sugar
1 c mashed ripe bananas
1 large egg
1 1/2 c flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 c buttermilk
1/2 tsp vanilla
1/2 c mini chocolate chips (semi-sweet)
3 tbsp chopped almonds
2 tbsp sugar
Recipe
Preheat to 375.
Grease 16 muffin cups.
Beat butter at medium speed until creamy;
Gradually add 1 c sugar; beat well.
Add mashed banana and egg, beting well.
Combine dry ingredients then add to butter mixture alternately with buttermilk. (begin and end with dry ingredients) Mix at low speed after each addition until well blended.
Add vanilla and chocolate chips.
Pour into muffin cups, filling about 3/4 full
Top with chopped nuts and sugar.
Bake 20 minutes.
Remove and cool on wire racks.
Makes 16 muffins.
Notes:
I used unsalted butter; buttermilk powder and water;
substituted chopped pecans for the almonds;
I used paper liners in the muffin cups and sprayed the liners.
I baked 21 minutes.
