Recipe Introduction
Excellent soup. Could easily be prepared on the stove although was written for the crock pot.
List of Ingredients
Beef Fajita Soup
1 lb beef stew meat
15 oz can pinto beans, rinsed and drained
15 oz can black beans, rinsed and drained
14 1/2 oz can diced tomatoes with roasted garlic (do not drain)
14 oz can beef broth
1 small green pepper, sliced thin
1 small red pepper, sliced thin
1 small onion, sliced thin
1 1/2 c water
2 tsp ground cumin
1 tsp seasoned salt
1 tsp pepper
Toppings: sour cream, shredded Monterey Jack or Cheddar cheese, chopped olives
Recipe
Combine ingredients, except toppings, in crock pot. Cover and cook on low for 8 hours.
Serve with toppings.

I browned the meat and added Penzey’s fajita seasoning blend, which it needed
