    Blueberry Pancakes

    List of Ingredients






    2 c flour
    2 tsp baking powder
    1 tsp salt
    3 tbsp sugar
    2 eggs
    1 1/2 c milk
    2 tbsp melted butter

    1 c blueberries
    1/2 c flour





    Recipe




    Toss blueberries with 1/2 c flour.

    Combine dry ingredients and mix well.
    Combine eggs and milk, mixing well.

    Add wet ingredients to the dry ingredients and stir.
    Add blueberries and stir gently.
    Stir in melted butter.

    Let rest 4 minutes.

    Cook on lightly greased griddle, be sure to allow the bubbles on the top of the pancakes to open.

    4 to 6 servings

    Notes:
    I used fresh blueberries, unsalted butter, and large eggs.
    Next time I might add a bit of cinnamon.
