    List of Ingredients





    1/3 c sugar
    1/4 c butter, softened
    1 egg
    2 1/3 c flour
    1 tbsp and 1 tsp baking powder
    1 c milk
    1 tsp vanilla
    1 1/2 c fresh blueberries*

    Topping:
    1/2 c sugar
    1/3 c flour
    1/2 tsp cinnamon
    1/4 c softened butter



    Recipe




    Preheat to 375. Line 18 muffin cups.

    Topping:
    Combine sugar, flour and cinnamon, mixing well.
    Cut in butter until the mixture looks like coarse crumbs.

    Muffins:
    Cream sugar and butter until light and fluffy.
    Add egg and mix well.
    Combine flour and baking powder.
    Alternately add dry ingredients and milk to the creamed butter mixture, stirring well after each addition.
    Stir in vanilla.
    Add blueberries and mix in carefully.
    Spoon into prepared muffin cups.
    Top with streusel topping.
    Bake for 25 to 30 minutes or until a toothpick tests clean.
    Remove and serve.
    Makes 18.

    NOTES:
    I used frozen blueberries.
    I did not line the muffin cups but next time I will.
