    List of Ingredients





    2 c flour
    3/4 c sugar
    2 1/2 tsp baking powder
    1/2 tsp salt
    3/4 c milk
    1 large egg, lightly beaten
    1/4 c butter, melted
    1/2 tsp grated lemon peel
    2 c (12 oz) white chocolate chips, divided
    1 1/2 c fresh or frozen (thawed and drained) blueberries

    Streusel Topping:
    1/3 c sugar
    1/4 c flour
    1/4 tsp cinnamon
    3 tbsp butter, softened to room temperature


    Recipe




    Preheat to 375.
    Line 18 muffin cups with paper liners.

    Mix streusel topping until it resembles coarse crumbs; set aside.
    Combine flour, sugar, baking powder and salt in a large bowl.
    Stir in milk, egg, melted butter and lemon peel. Mix well.
    Add 1 1/2 c white chocolate chips, mix.
    Add blueberries and mix.
    Pour into muffin cups until almost full.
    Sprinkle the tops with streusel.
    Bake for 22 to 25 minutes or until a wooden pick inserted in the center comes out clean.
    Cool for 5 minutes in pans, then remove to wire racks and cool slightly.


    While muffins are cooling, melt remaining white chocolate chips in a small heavy duty plastic bag.
    Microwave on 70% power for 30 seconds.
    Knead; then microwave at 10 second intervals utnil the chips are melted and smooth.
    Cut a tiny corner from the bag and drizzle over muffins.
    Serve warm.

    Notes:
    Makes 18 muffins.
    I baked for 27 minutes.
    VERY rich.
    I think they would be good without the melted chips on top too.
