    Refreshing!!! Not overwhelming, but a mild lime flavor.


    List of Ingredients





    1 pie crust, unbaked
    6 eggs
    2 c sugar
    2/3 c fresh lime juice, (about 5 or 6 limes)
    1/4 c butter, melted

    whipped cream for top


    Recipe




    Prepare pie crust and set aside.
    Melt butter and set aside to cool.
    Juice limes.
    Beat eggs lightly.
    Add sugar, lime juice and cooled butter.
    Mix well.
    Pour into prepared pie shell.
    Bake for 30 to 35 minutes or until center of pie is set and crust is golden.
    Cool, then refrigerate.

    Serve chilled and top with sweetened whipped cream.
    8 servings

    Notes:
    I used large eggs, 5 limes and real butter.
    I had to bake 42 minutes.
    This makes a lot of filling, really fills the pie shell.
