    Chicken Parmesan

    List of Ingredients






    4 boneless, skinless chicken breasts
    2 cans (14 `/2 oz each) stewed tomatoes
    2 tbsp cornstarch
    1/2 tsp oregano or basil, crushed
    1/4 tsp hot pepper sauce, optional
    1/4 c grated Parmesan cheese


    Recipe




    Preheat to 425. Grease baking dish.

    Place chicken in dish, cover with foil, and bake for 15 minutes.

    Meanwhile, combine tomatoes, cornstarch, oregano or basil and pepper sauce (if desired) in a saucepan.
    Cook, stirring constantly, until thickened.

    Pour heated sauce over chicken and top with grated cheese.

    Bake 5 additional minutes, uncovered. Garnish with parsley.

    4 servings.

    NOTES:
    I prefer Italian style tomatoes.
    I use flour in place of cornstarch.
