    Chocolate Ice Cream Sandwich Cookies

    These are simple to make, delicious to eat and a family favorite.

    List of Ingredients






    1 1/4 c butter, softened
    2 c sugar
    2 eggs
    2 tsp vanilla
    2 c flour
    3/4 c cocoa
    1/2 tsp salt
    1 c finely chopped nuts, opt.

    Recipe





    Preheat to 350.
    Cream softened butter with sugar until fluffy.
    Add eggs & vanilla; beat well.
    Combine dry ingredients. Add to creamed mixture and mix well.
    If using nuts, add and stir.
    Drop by teaspoonfuls* onto ungreased cookie sheet.
    Bake for 8 or 9 minutes - DO NOT OVERBAKE
    They wil soft and will look "puffy" when baking. They flatten as they cool.
    If you overbake, they will not be soft.
    Remove from oven, leave on baking sheets to set for about 1 to 2 minutes, then cool on wire racks.
    Makes 4 1/2 dozen

    Notes:
    I use unsalted butter, large eggs and omit the nuts.
    I use a medium sized cookie scoop (like an ice cream scoop) and let them bake 8 to 10 minutes, watching them carefully so they don't overbake.
    I normally let them cool at least 2 minutes before removing to the wire racks. I wrap them in pairs and freeze. When I want to use them, I let them sit at room temp for about 5 to 10 minutes before filling.
