    Chocolate Peanut Butter Chip Muffins

    In the cookbook, these are called "Gierek's Favorite Muffins" but my family refers to them as the name I've given. They are soooo good and easy to make!






    List of Ingredients





    2 c flour
    1 c sugar
    1/3 c unsweetened cocoa powder
    1 tbsp baking powder
    1/2 tsp salt
    1 slightly beaten egg
    1 c milk
    1/3 c butter, melted
    3/4 c peanut butter flavored baking pieces

    Recipe




    Line 18 muffin cups with paper liners.
    Preheat to 400.
    Combine dry ingredients and mix well.
    Combine egg, milk and butter. Mix well.
    Add liquids to dry ingredients and stir until just moistened.
    Add the peanut butter chips and carefully mix.
    Divide batter equally into muffin cups, filling each about 3/4 full.
    Bake for 18 to 20 minutes or until the muffins test done.
    Cool on a wire rack for about 5 minutes, then remove from pan and enjoy.


    Notes - I used Hershey's cocoa, a large egg, lowfat milk, unsalted butter and Reese's peanut butter chips.
    I lightly sprayed the cupcake liners. I made 18 regular sized muffins.
    I mixed these in my KA mixer.
    I baked for 19 minutes.
    They reheated well in the microwave but were also delicious at room temperature.

    Recipe also could fill 6 of the large (3 1/4 inch) muffin cups. baking time would be about 30 minutes.
