    Very good! I did not use the streusal topping, I sifted powdered sugar on top.

    List of Ingredients





    2 c flour
    2 1/4 tsp baking powder
    1/2 tsp salt
    2 tbsp sugar
    1 egg
    1 c milk
    3 tbsp butter, melted
    2 c cranberries

    Optional Struesal topping
    1/4 c sugar
    1 tsp lemon zest
    1/4 c flour
    2 tbsp butter



    Recipe




    Preheat to 350.
    Spray an 8 inch square baking pan.
    Combine dry ingredients and stir.
    Add egg, milk and melted butter, mix well.
    Add cranberries and stir carefully.
    Pour into greased pan.
    Bake for 20 minutes or until a toothpick tests clean.

    9 servings.
    May be frozen.

    Optional Struesal topping:
    Combine sugar, lemon zest and stir.
    Let sit until the sugar has absorbed the lemon flavor.
    Add flour and stir.
    Cut in 2 tbsp butter until it resembles coarse meal.
    Sprinkle over top of cake just before baking.

    Notes:
    May also be made with blueberries.
