    Lemon-Pepper Chicken Saute

    This is so simple to make and the flavor is wonderful!

    List of Ingredients





    1 1/4 tsp lemon-pepper seasoning
    4 boneless, skinless chicken breasts (about 1 lb)
    2 tbsp butter *
    1 c baby carrots, quartered lengthwise
    1/3 c sliced green onion
    3/4 c chicken broth
    1 tbsp flour
    1/4 c sour cream
    1 tsp parsley flakes


    Recipe




    Rub lemon pepper on each chicken piece and set aside.
    In a large skillet, melt butter over medium heat.
    Sauted chicken about 7 to 10 minutes on each side or until done; remove and keep warm.
    Add sliced carrots and onions to skillet; saute 2 minutes.
    Whisk together the chicken broth and flour then add to skillet.
    Bring to boil and simmer 2 minutes.
    Add sour cream and parsley to skillet.
    Simmer 2 additional minutes.
    Spoon mixture over chicken and serve.
    4 servings.

    Notes:
    I coated the pan well with olive oil and used half of the butter listed. Next time I will try only olive oil.
    I used more than 1 cup carrots.
    I used low fat sour cream.
    I cooked the chicken for 10 minutes on the first side and 8 on the second side.
    I served this on rice.
