    List of Ingredients






    crust:
    2/3 c butter, softened
    2/3 c packed brown sugar*
    1 1/4 c flour

    filling:
    3 eggs beaten
    1/3 c sugar
    2 tsp vanilla
    1 1/2 c flaked coconut
    3/4 c chocolate malted milk powder
    1/4 c flour
    1 1/2 tsp instant expresso powder or instant coffee crystals*
    1/4 tsp baking powder
    1/4 tsp salt

    Top Layer:
    1 1/2 c sifted powdered sugar
    1/2 tsp instant expresso powder or instant coffee crystals*
    2 tsp vanilla
    1 tbsp boiling water (or more)


    Recipe




    Crust:
    Preheat to 350.
    Combine butter, brown sugar, and flour.
    Mix until smooth.
    If necessary, knead to blend (I did)
    Spray a 9 x 13 pan; pat mixture into bottom of pan.
    Bake 15 minutes or until just set. (I baked 17 min)

    Filling:
    While crust bakes, beat eggs, sugar and vanilla together.
    Stir in coconut, malted milk powder, flour, expresso powder, baking powder and salt.
    Carefully spread mixture over hot crust.
    Bake 20 to 25 minutes, or until set. (I baked 25)
    Cool on a wire rack.

    Topping:
    Combine powdered sugar, malted milk powder, vanilla, espresso powder and boiling water. Beat until smooth. Add additonal boiling water until mixture is of spreading consistency ( I used 3 tbsp)
    Spread over cooled bars.
    Makes 36 small bars.

    Notes:
    *I used granulated sugar in place of the brown sugar.
    *I used dutch cocoa in place of the espresso powder.
