    Marinated Carrots

    List of Ingredients




    Marinated Carrots


    2 lb small carrots
    1 onion, chopped medium fine pieces
    1 green pepper, chopped medium fine
    1/2 c chopped celery
    1 can (10 1/2 oz) tomato soup
    3/4 c sugar
    1/2 c salad oil - do not use olive oil
    3/4 c cider vinegar
    1 tsp prepared mustard
    1 tsp salt
    1/4 tsp pepper

    Recipe





    Peel and slice carrots. Cook until almost done, but not soft - about 10 to 15 minutes. Cool. Add onion, celery and
    green pepper to carrots. Mix remaining ingredients in a blender until very well mixed. Pour over vegetables and
    refrigerate at least 24 hours before serving. Keep refrigerated - keeps a long time. I always double this, sometimes
    triple it.
