Oatmeal Muffins

List of Ingredients
1 egg, well beaten
1 c sour milk or buttermilk
1 c oatmeal
1/2 c sugar
1 c presifted flour
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/3 c shortening, melted and cooled
Recipe
Preheat to 375.
Grease 12 muffin cups
Combine egg, buttermilk, oatmeal and sugar in mixing bowl.
Mix well.
In another bowl, sift the dry ingredients together.
Add egg mixture and stir.
Add shortening and stir.
Spoon into muffin cups, fill about 2/3 full, and bake for 20 minutes.
Makes 12.
Notes:
I used paper lined muffin cups (I sprayed the paper liners)
I used a large egg, buttermilk powder with water, old fashioned oatmeal and butter flavored shortening.
The original recipe calls for brown sugar in place of white sugar.
