    Peach Cobbler



    Easy to make, delicious to eat! We topped it with ice cream. Whipped cream would also be good.

    List of Ingredients






    Filling:
    3 lb ripe peaches, cut into 1/2 inch slices, DO NOT peel
    1/4 to 1/2 c sugar, depending on sweetness of peaches
    1 tbsp lemon juice
    2 tbsp flour

    Topping:
    1 1/2 c flour
    1/2 c sugar
    2 1/2 tsp baking powder
    1/4 tsp salt
    1 large egg, beaten
    2/3 c buttermilk
    6 tbsp butter, melted and cooled


    Recipe




    Filling:
    Slice peaches. Combine with remaining ingredients and mix carefully.
    Grease a 2 1/2 quart baking dish.
    Spoon peach mixture into dish.

    Topping:
    Preheat to 375.
    Melt butter and allow to cool.
    Combine and mix dry ingredients.
    Add beaten egg and buttermilk, mix till moistened.
    Add butter.
    Drop by heaping spoonfuls over peaches.

    Bake for 40 minutes in oven center, until golden brown and filling is bubbly.

    NOTES:
    I used buttemilk powder.
    I used a dish larger than 2 1/2 quarts because it really filled the 2 1/2 quart dish.
    We topped this with ice cream.
