    Peanut Butter Coffee Cake

    Very good! Could be for brunch or even a dessert.


    List of Ingredients





    Topping:
    1/2 c sugar
    1/2 c flour
    1/4 c peanut butter
    2 tbsp butter, melted

    Cake:
    1/2 c peanut butter
    1/4 c shortening
    1 c sugar
    2 eggs
    2 c flour
    2 tsp baking powder
    1/2 tsp baking soda
    1 c milk

    Recipe




    Combine topping ingredients and mix well. Set aside.

    Cream peanut butter and shortening.
    Slowly beat in 1 c sugar, mixing well.
    Add eggs one at a time and beat until fluffy.
    Combine flour, baking powder and baking soda.
    Add flour mixture alternately with milk, beginning and ending with dry ingredients. Mix well between additions.
    Spread in a greased 9 x 13 pan.
    Top with crumbled topping mixture.
    Bake at 375 for 30 to 35 minutes.
    Makes 16 to 18 servings.


    Notes:
    Original topping recipe called for 1/2 c packed brown sugar
    Cake recipe called for 1 c packed brown sugar
    I used crunchy peanut butter, unsalted butter, butter flavored shortening and large eggs.
    I baked for 32 minutes.
