    Salmon and Noodle Casserole

    Good comfort food. The flavor of the salmon did seem to mellow out more than we would like. The bread crumbs added a nice crunch to the top of the casserole.


    List of Ingredients





    8 oz egg noodles
    2 tbsp butter
    2 tbsp flour
    1 c milk
    1 lb can salmon
    salt and pepper to taste
    1 c fresh bread crumbs
    1/4 c melted butter*


    Recipe




    Cook noodles according to package.
    Melt butter in a saucepan; add flour and stir to mix well.
    Slowly stir in the milk.
    Drain liquid from salmon and add to milk mixture; mix well.
    add salmon to milk mixture and stir to combine.

    Preheat oven to 350.
    Spray a 2 quart casserole dish.
    Layer: 1/2 of the noodles, 1/2 of the salmon mixture; repeat layers.
    mix bread crumbs with melted butter - sprinkle over casserole.
    bake for 30 minutes.
    6 servings

    Notes:
    I used unsalted butter and lowfat milk.
    I sprayed the bread crumbs lightly with olive oil* rather than mixing with melted butter.
