    Twin Mountain Blueberry Coffeecake

    This goes together so fast and the flavor is wonderful!

    List of Ingredients





    2 c flour
    1 c sugar
    3 tsp baking powder
    1/4 tsp salt
    1/2 c shortening
    2 eggs, beaten
    1 c milk
    1 1/2 c fresh blueberries
    1 1/3 c flaked coconut


    Recipe




    sift together dry ingredients.
    Using a pastry blender, cut in shortening until fine crumbs.
    Combine beaten eggs and milk, mixing well.
    Add egg mixture to crumb mixture and stir to mix.
    Preheat to 375.
    Add blueberries and stir gently.
    Grease 2 round 9-inch cake pans.
    Divide and pour batter into the two pans.
    Sprinkle coconut over batter.
    Bake for 25 minutes.
    Remove from pans and cool on wire racks.
    Makes 2 coffeecakes.

    Notes:
    I used butter flavor shortening, large eggs and reduced fat milk.
    I used frozen blueberries, rinsed well and coated with flour.
    I baked for about 26 minutes.
