    Kamut flour - a variety of wheat, high in gluten

    Spelt flour - variety of wheat, high in gluten

    rye flour - moderate amounts of gluten, related to wheat, heavy texture in baked goods

    barley flour - small amounts of gluten, related to wheat

    oat flour - small amount of gluten, related to wheat

    Millet flour - related to wheat, grainy texture

    brown rice flour - tasteless, grainy, related to wheat

    teff flour - expensive, hevy and dark, distantly related to wheat

    buckwheat flour - fairly dry, dark grade has strong taste

    amaranth flour - may have strong taste, must store in refrigerator

    quinoa flour - expensive, may have bitter flavor, refrigerate

    garbanzo flour - expensive

    soy flour - a beany taste, many people are allergic to soy
