    To make whipped cream: In a chilled bowl with chilled beaters,
    beat 1 cup cold heavy cream until thickened. Sweeten or add
    flavorings, if desired. Continue to beat until cream forms soft or still
    peaks, as you prefer.

    Sweetened whipped cream: Add 2 teaspoons to 2 tablespoons
    sugar, 1 to 4 tablespoons sifted confectioners' sugar, or 2 teaspoons
    honey to whipped cream.

    Liquor-flavored whipped cream: Prepare whipped cream, adding
    1 to 11/2 tablespoons liquor to cream with the sugar.

    Cocoa-flavored whipped cream: Combine a small amount of the
    cream and vanilla with 1/3 cup sifted confectioners' sugar, 3
    tablespoons unsweetened Dutch process cocoa and 1/8 teaspoon
    salt. Stir in the remaining cream and beat as directed, omitting the
    additional sugar.

    Coffee-flavored whipped cream: Prepare whipped cream, then
    add 2 teaspoons instant coffee or espresso powder to the cream
    along with 1/2 teaspoon vanilla. Use about 1 tablespoon plus 2
    teaspoons sugar or to taste.
