    Banana Buttermilk Brunch Cake

    Easy to prepare and great flavor - not too 'banana-ee'.

    List of Ingredients




    2 1/2 c flour
    1 3/4 c sugar
    1 tsp salt
    3 tsp cinnamon
    1 tsp nutmeg
    3/4 c oil
    2 eggs
    1/2 c buttermilk
    1 tsp baking powder
    1 tsp baking soda
    1 c smashed bananas
    1/2 c chopped nuts, optional

    Optional glaze:
    1/2 c powdered sugar
    1 1/2 - 2 tsp milk
    1/2 tsp vanilla

    Recipe



    Combine flour, sugar, salt, cinnamon and nutmeg; stir well.
    Add oil and mix until crumbly.
    Reserve 1 c of this mixture.

    Add remaining ingredients, except nuts, and mix until smooth.
    Pour into a greased 9x13 microwave safe dish.
    Sprinkle reserved mixture over batter and top with nuts.
    Place a dish upside down in the microwave, then place this baking dish on top.
    Microwave on high for 12 minutes.
    Cool about 10 minutes and glaze if desired.

    Mix glaze ingredients togther. If needed to reach a drizzle capacity, add more milk.

    Notes:
    Sugar could be changed to 1 c brown sugar and 3/4 c granulated sugar.
    I omitted the nuts.
    I did glaze it.
