    Cinnamon Buttermilk Coffee Cake

    Excellent flavor and very filling.

    List of Ingredients




    2 1/2 c flour
    2 c sugar*
    1/2 c butter, softened to room temperature
    1/3 c flour
    1 egg
    1 tsp baking soda
    1 c buttermilk**
    1 tsp cinnamon

    for top:
    1/2 c chopped pecans

    Recipe



    Combine the 2 1/2 d flour and sugar. Mix well.
    Using a pastry blender, cut in the butter until it looks like coarse meal. Set aside 3/4 c of this mixture.

    Preheat to 325. Prepare a 9 inch square pan.

    Combine remaining crumb mixture with the 1/3 c flour, egg, baking soda, buttermilk and cinnamon.
    Stir until moistened.

    Pour into a 9 inch square pan.
    Mix nuts with the reserved 3/4 c crumb mixture.
    Spread over batter.
    Bake for 1 hour or until cake tests done with a toothpick.


    Notes:
    *Original recipe called for 1 c brown sugar, firmly packed.
    **I used buttermilk powder and water.
    I used a large egg and Chinese cinnamon.
