    This is a quick, easy casserole with great flavor.

    List of Ingredients




    Inside-out Stuffed Peppers

    1 pound ground beef

    1/2 cup chopped onion
    1 large bell pepper, chopped
    1/2 cup uncooked long grain rice
    1/2 cup water
    2 teaspoons Worcestershire sauce
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1 can (8 oz) tomato sauce
    1 can (16 oz) stewed tomatoes, cut up
    Shredded cheese - optional

    Recipe





    In a skillet, brown beef, and drain.
    Transfer to a greased 2 qt. casserole.
    Mix together next 8 ingredients and spread over hamburger.
    Pour stewed tomatoes over the top.
    If using cheese sprinkle on the last 10-15 minutes of baking

    Cover and bake at 350º for 1 hour or until rice is tender.


    Notes:
    I added some sliced mushrooms.
    I used fresh tomatoes which I skinned and simmered a bit in the skillet after browing the hamburger.
    I did top it with cheese and baked for 10 minutes.
    Next time, I will mix the rice and water while the hamburger is browning and cover the casserole while it bakes.
