Mercy's Baked Squash

Another wonderful recipe included in Ms. Hager's book, Sew Deadly. Her books are entertaining and the recipes a real treat.


List of Ingredients




5 lb medium yellow squash
2 eggs
1 1/2 c bread crumbs - divided
4 oz butter
1/4 c sugar
2 tsp salt
2 tbsp chopped onion
dash of pepper

Recipe



Remove the tips from the squash then cut into 3 or 4 pieces.
Place in a large saucepan, cover squash pieces with water and cook until tender.
Drain well.
Preheat to 350.
Mash the cooked squash.
Add eggs, 1 c of bread crumbs, butter, sugar, salt, onon and pepper.
Mix well.
Spread inot a prepared 2-quart baking dish.
Cover with remaining bread crumbs.
BAke until lightly browned.
