Murder Can Botch Up Your Birthday by Selma Eichler

Another very entertaining and funny book from Selma Eichler and a recipe too! Can't get much better than that.


List of Ingredients




2 lb sweet potatoes, approximately
4 tbsp butter, softened
1/4 c heavy cream
1 tbsp Kahlua
salt to taste
pepper, freshly ground, to taste
Mini marshmallows, to taste





Recipe



Preheat to 375.
Scrub potatoes well.
In the top of each potato, cut a small but deep slit
Bake for about 1 hour or until fork tender.
Remove from oven and allow to cool slightly.
Peel when potatoes can be handled without burning your skin.

Preheat oven to 350.
Use a food processor with a steel blade to combine the flesh part of the potatoes, butter and heavy cream.
Continue to process until mixture is smooth.
Add the Kahula, salt and pepper; blend.
Spread in an casserole dish and bake at 350 for about 25 minutes or unitl very hot.
Top with mini marshmallows and bake an additonal 5 minutes or until marshmallows are golden.

4 servings.

Note: If preparing in advance, complete all steps except baking. Refrigerate overnight or freeze. Bring to room temperature before baking as directed above.
