Veal Scaloppine with Mushrooms and Ham

    Source of Recipe

    Murder can Run Your Stockings

    Recipe Introduction

Another great recipe from Selma Eichler's book.

This really sounds good - hope to try it soon!

    List of Ingredients

1 1/2 lb veal scaloppine, sliced very thin
clove of garlic, cut in hal
    flour for dredging
    1/4 c butter
cooked ham, cut into strips about 1/2 by 18 inch
    3/4 lb mushrooms, thinly sliced
1/2 to 3/4 tsp salt, to taste
    dash of pepper
    1/2 c dry white wine
    1 1/2 tsp lemon juice
    snipped parsley for garnish

    Recipe

Rub veal with cut garlic; dredge in flour, coating both sides of meat
Heat butter on high in a large skillet.
Add veal and saute until golden brown, about 1 minute on each side. You may need to do the meat a few pieces at a time.
    remove from pan.

Put ham in skillet and stir; remove

Reduce heat, return veal to skillet and top with ham and mushrooms. Sprinkle on the salt and pepper, then add wine.
Cover and cook over very low heat until fork tender, or about 20 minutes. Do not overcook so check often.
If it becomes dry, add water a tablespoon at a time.

Before serving, sprinkle with lemon juice and garnish with parsley.

    6 servings
