    Recipe was contributed to the cookbook by The Paradise Gateway B&B and Guest Cabins. These are yummy!

    List of Ingredients




    2 c flour
    3 tbsp sugar
    3 1/2 tsp baking powder
    1/4 tsp salt
    2/3 c margarine
    1/3 c dried cherries, blueberries, dates, raisins or cranberries
    3/4 c milk
    Additonal milk (about 2 tbsp) for tops

    Recipe



    Sift together flour, sugar, baking powder and salt.
    Cut in margaine until mixture resembles coarse oatmeal.
    Add dried fruit and mix.
    Add 3/4 cu milk and mix lightly with a fork until just blended.
    Add an additional 1 to 2 tbsp of milk if needed.
    Preheat to 425.
    Divide dough into 2 equal parts and turn out onto floured board.
    Pat into circles, about 1 inch thick. Do not handle more than necessary.
    Place circles on a baking sheet.
    Score with a knife halfway through to form 4 portions in each circle.
    Brush each circle with 1 tbsp milk.
    Bake for 18 to 20 min.
    Makes 8 scones.

    Notes:
    I used butter rather than margarine.
    I used dried cherries.
