    Aztec Sunburst Cookies

    1 c shortening
    1 c sugar
    1 egg
    2 tbsp milk
    3 c flour
    2 tsp baking powder
    1 tsp anise seed, crushed
    1/4 tsp salt
    3 tbsp orange juice
    yellow food coloring
    1 egg white, lightly beaten
    1 tbsp sugar
    1/2 tsp cinnamon

    Beat shortening; gradually add sugar and beat until fluffy.
    Add egg and milk; beat.
    Combine dry ingredients and add to batter alternately with orange juice, beating well after each addition.
    Dough should be smooth and pliable.
    Tint 1/3 of dough with yellow food coloring.**
    cover dough and chill at least 1 hour.

    Preheat to 350.
    roll uncolored dough onto a lightly floured surface - roll to 1/4 inch thickness.
    Cut dough into rings with a 2 1/2 inch doughnut cutter.
    Re-roll scraps.
    Place rings 1 inch apart on ungreased cookie sheet.
    Roll yellow dough in 3/4 inch balls**
    Place a ball in the center of each cookie ring then flatten it slighty to fill the center.
    Make faces in dough using a toothpick.
    use fork tines to score edges of cookies

    Brush cookies with lightly beaten egg white.
    Combine sugar and cinnamon; sprinkle over cookies.
    Bake at 14 to 16 minutes or until edges are light golden brown
    Cook on racks.
    makes about 20 cookies.

    NOTE:
    the yellow dyed portion is for the 'sun' face of the cookies. In my opinion, the dying and making faces would not be necessary.
