    Banana Chocolate Chip Bread and Mini Loaves
    adapted from Pillsbury: The Complete Book of Baking

    3/4 cup sugar
    1 stick / 1/2 cup softened butter
    2 medium-sized ripe (or overripe) bananas
    1/2 cup sour cream
    2 large eggs
    2 cups flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup mini semi-sweet chocolate chips

    Preheat oven to 350ºF. Butter and flour bottoms of loaf pans.
    Choose two 8×4 loaves or 18 regular muffins or 8 mini loaves approximately 3 inches wide.

    Beat softened butter and sugar together until light and fluffy.
    Add sour cream, eggs and bananas and mix until everything is incorporated.
    Slowly stir in flour, baking soda and salt.
    Stir in chocolate chips.
    Bake on center rack at 350º 55 minutes for a loaf pan, 25-30 minutes for muffins or mini loaves until toothpick in center comes out clean.
    Cool at least 20 minutes before removing from pan to avoid tearing on the bottom side.
    Cool completely prior to packaging.
