    BANANA SCOTCH MUFFINS

    1 cup all-purpose flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. ground cinnamon
    Pinch of ground nutmeg
    1 cup quick-cooking oats, uncooked
    1/2 cup sugar
    1 large ripe banana, mashed (I used 2 small bananas)
    1 large egg
    1/4 cup milk
    1/4 cup vegetable oil
    1 tsp. vanilla extract
    1/2 cup finely chopped walnuts
    1/2 cup butterscotch morsels

    Recipe




    Combine dry ingredients in a large bowl; make a well in the center of mixture. Set aside.

    Combine banana, egg, milk, oil, and vanilla in a medium bowl, beating with a wire whisk until blended. Add to dry ingredients, stirring just until moistened. Fold in walnuts and butterscotch morsels.

    Spoon batter into a greased muffin pan, filling 3/4-full. Bake at 400° F. for 13 to 15 minutes. Remove from pan immediately, and cool on a wire rack. Yield: 1 dozen.
