    Cheeseburger Mini Muffins

    Servings: 5 dozen / 2 dozen Prep time: 15minutes Cook time: 12-15minutes /14-18minutes

    List of Ingredients


    1/2 pound lean ground beef
    1 small onion, finely chopped
    2 1/2 c. flour
    1 Tbl. brown sugar
    2 teas. baking powder
    1 teas. seasoned salt
    3/4 c. ketchup
    1 teas. ground mustard
    3/4 c. evaporated milk or regular
    1/2 c. margarine,melted
    2 large eggs
    2 c. shredded Cheddar cheese



    Recipe


    In a skillet, cook and scramble beef and onion over medium heat until meat is no longer pink; drain.
    In a bowl, combine the flour. sugar, baking powder, mustard and salt.
    In your mixer bowl, combine the ketchup, milk. margarine,and eggs; mix in the dry ingredients just until moistened .
    Fold in the beef mixture and cheese.
    Fill greased mini-muffing cups 3/4 full.
    Bake at 425^ for 12-15 minutes or until toothpick comes out clean.
    Cool for 5 minutes before removing from pans to wire rack. Refrigerate any leftovers.
    Makes 5 dozen.
    Freeze great-make ahead.
    NOTE: If you bake in regular size muffin cups bake for 14-18 minutes
    This makes 2 dozen large.

    To make breakfast muffins:

    Substitute breakfast sausage for hamburger.
    Use regular salt instead of seasoned.
    Eliminate ketchup.
    Increase milk to 1 1/4 c. instead of 3/4 c.
