    1/2 c. butter
    1 c. flour
    3/4 c. sugar
    2 t. baking powder
    1/4 t. salt
    3/4 c. milk
    2 to 3 c. canned peaches, including liquid (1 lb.)

    Preheat oven to 350 degrees F. Melt butter in metal baking pan (8 or 9" square) on stovetop. Meanwhile, combine flour, sugar, baking powder, salt, and milk. Stir until until smooth, then dump into middle of melted butter. Pour fruit and juice into center of batter. Do NOT stir! Bake about 40 min, until cobbler has spread out and developed a light brown crust. Remove pan from oven and cool. Serve warm or refrigerate.

    This recipe works well with peaches, blackberries, blueberries, or cherries. If you use fresh fruit instead of canned, you get a "drier" cobbler with less juice and more fruit. It's all good, especially with homemade vanilla ice cream on the side.
