Oatmeal Cake

List of Ingredients




Oatmeal Cake

1 1/4 C Boiling Water
1 C Oatmeal
1/2 C Butter/Margarine
1 C Brown & 1 C White Sugar(s)
2 Eggs - beaten
1 tsp Vanilla
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Salt
1 1/2 C Flour

Topping:
1 C Brown Sugar
1 C Shredded Coconut
1/2 C Cream or Half & Half
4 tsp Butter/Margarine



Recipe





Pour water over oatmeal & let sit for 20 minutes.
Cream butter & sugars then add eggs & vanilla.
Add dry ingredients - mix.
add oatmeal.
Grease & flour cookie sheet.
Pour in cake.
Bake at 350 for 30 minutes.
While baking, mix up topping.
Put topping on cake while still hot/warm then brown it under the broiler until bubbly and toasty brown.
Keep oven door open so you can watch it.
It'll burn quickly, so it needs watched.
