    THIS CAKE TAKES TIME TO DO BUT IT IS WORTH THE WAIT........


    List of Ingredients


    • 1 1/3 cup sugar
    • 1 1/3 cup water
    • 1 cup raisins
    • 1 tablespoon butter
    • 2 large carrots grated
    • teaspoon cinnamon
    • teaspoon cloves
    • 1 teaspoon nutmeg
    • SIMMER THIS TOGETHER FOR 5 MINUTES.
    • COVER AND REST IT FOR 12 HOURS. THEN ADD:
    • 1 cup pecans
    • 2 cups flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder
    • Bake in 2 - 8 inch pans at 300
    • CREAMY CARAMEL FROSTING
    • mix in saucepan: 1/2 cup brown sugar
    • 1/2 cup evaporated milk
    • 1/8 teaspoon salt
    • 1/4 cup butter or margarine


    Instructions


    1. Frosting: Cook and stir over meduim heat until it reaches a full all over boil.
    2. take off the heat and let cool to lukewarm. Add 1 teaspoon vanilla. Then add 3 cups powdered sugar and 1/2 cup sugar at a time.
    3. If frosting becomes to thick to spread easily add a few more drops of milk....
