    THIS RECIPE WAS TESTED IN A 2 QUART ROUND PYREX CASSEROLE DISH IN AN 850 WATT MICROWAVE


    List of Ingredients


    • 1 cup all purpose flour
    • 1 cup cinnamon
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon ground ginger
    • 1/2 cup vegetable oil
    • 2 eggs
    • 1 1/2 cup grated or finely chopped carrots
    • 1 can (8oz) crushed pineapple well drained
    • 3/4 cup chopped pecans
    • 1 can cream cheese frosting


    Instructions


    1. In mixing bowl combine the first 8 ingredients.
    2. Add oil and mix well;
    3. add eggs one at a time beating well after each egg
    4. Stir in carrots, pineapple and pecans.
    5. Transfer to greased 8 inch round microwave dish.

    6. Microwave uncovered at 70% power for 12 - 14 minutes rotating a half turn once or until a moist 1-1 1/2 inch in diameter remains in the center .
    7. WHEN TOUCHED CAKE WILL CLING TO YOUR FINGER WHILE UNDERNEATH WILL BE ALMOST DRY.
    8. Cool completely on wire rack. Invert onto sweving plate.
    9. Frost cake and stor in refrigerator.
    10. Yield 6-8 servings
