THIS RECIPE WAS TESTED IN A 2 QUART ROUND PYREX CASSEROLE DISH IN AN 850 WATT MICROWAVE
List of Ingredients
- 1 cup all purpose flour
- 1 cup cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/2 cup grated or finely chopped carrots
- 1 can (8oz) crushed pineapple well drained
- 3/4 cup chopped pecans
- 1 can cream cheese frosting
Instructions
- In mixing bowl combine the first 8 ingredients.
- Add oil and mix well;
- add eggs one at a time beating well after each egg
- Stir in carrots, pineapple and pecans.
- Transfer to greased 8 inch round microwave dish.
- Microwave uncovered at 70% power for 12 - 14 minutes rotating a half turn once or until a moist 1-1 1/2 inch in diameter remains in the center .
- WHEN TOUCHED CAKE WILL CLING TO YOUR FINGER WHILE UNDERNEATH WILL BE ALMOST DRY.
- Cool completely on wire rack. Invert onto sweving plate.
- Frost cake and stor in refrigerator.
- Yield 6-8 servings
