    List of Ingredients


    • 1/2 cup butter
    • 1 cup granulated sugar
    • 2 eggs
    • 1 cup light corn syrup
    • 1 teaspoon vanilla
    • 1 3/4 cups flour
    • 1/3 cup unsweetened cocoa powder
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon cinnamon, optional
    • 1 cup buttermilk or sour milk ** see note


    Instructions


    1. Preheat the oven to 350 degrees. Butter and flour and 8-inch cast iron skillet, set aside.
    2. Beat butter and sugar until light, beat in eggs, beat in corn syrup and vanilla
    3. Sift together flour, cocoa powder, baking soda, baking powder and cinnamon.
    4. Alternate adding sifted ingredients and milk to butter and sugar mixture.
    5. Pour batter into the skillet.
    6. Bake 25 to 30 minutes, until the center shakes a little and appears not to be quite done, but the outside rim is baked.
    7. a toothpick inserted in the center will come out clean


    Final Comments


    **NOTE - to make sour milk combine 1 tablespoon white vinegar or lemon juice with 1 cup of milk, let sit for a few minutes at room temperature. Sometimes this is call clabbered milk
