    Instructions


    1. Combine and put in large microwave bowl:
      1 cup milk
      1/2 cup evaporated milk
      1/2 cup water
      1 1/2 tablespoons margarine
    2. in separate bowl mix ( to get the lumps out) then add the above mixture:
      3/4 cup sugar
      dash of salt
      3 1/2 tablespoons cornstarch
    3. heat in microwave, stirring frequently, until it stars to thicken, Then add remaing ingredients
      1/2 teasppon vanilla
      3 egg yolks (beaten)
    4. cook until thick then add 1 cup coconut, pour into a baked pie shell.
    5. Top with meringue.
    6. This is the meringue recipe I use;
      3 egg whites
      1/8 cup water
      1/4 teaspoon baking powder
      dash of salt
      1 tablespoon cornstarch
      5-6 tablespoons sugar
    7. Beat the egg whites with the water until foamy. Gradually add the salt, baking powder,cornstarch and sugar. Beat until still peaks form, mound on top of cream pie, sprinkle with coconut anke at 350 until light brown about 15-20 minutes
